È a medium-fine-grained flour, of higher quality than most fish flours, because ité processed at reduced temperatures so as to maintain a high protein content and appetite holistimolators. With strong smell and taste qualities è very rich in fat compared to other fish flours.

È an ingredient that tends to untie, but helps in rolling as it makes the mix more fatty and less sticky.
