Its use with dairy products should be avoided, since we will have a dough that is almost unmanageable because of the stickiness that would result. On the other hand, it is very advisable in mixes with particularly marked graininess or, as with wheat flour, to recover doughs that cannot be rolled. To be used limitedly given its indigestible characteristics. Recommended dosage 5/10%
